Coconut Rice - Len Academy

Coconut rice is one of the most delicious forms of rice in Nigeria. It can take two forms (the white or jolof coconut rice). The key to enjoying your coconut rice meal is largely dependent on the way and manner with which it is prepared. Although not popiularly served in Nigerian parties, It's unique taste will always make you love a properly prepared coconut rice meal. So without wasting much of our time, let's see how it's prepared.

 

Ingredients


  • 1 cup (or derica) of rice

  • 0.43g of coconut milk (This the the extract from the meshed coconut)

  • 1 medium sized onion (sliced)

  • 0.8kg of tomatoes (sliced)

  • 4 medium sized peppers (sliced)

  • 1 small green pepper (sliced)

  • 1⁄4 cup vegetable oil

  • 1 teaspoon sea salt

  • 1 teaspoon black pepper

 

Cooking Directions


  1. Parboil the rice in water for about 10-15 minutes.

  2. Heat the vegetable oil in a cooking pot.

  3. Add the onions and stir with black pepper. Allow to fry for one minute.

  4. Add your sliced tomatoes, pepper, and coconut milk and salt.

  5. Allow to cook for about 10 minutes (this wil depend on the level of your fire).

  6. Add the rice

  7. Stir and cover for about 10 minutes (or when the rice is almost dry).

  8. Add you sliced green peppers aad allow it's juice to penetrate the rice.

  9. Your coconut rice is ready, Enjoy!
